Food should never be boring or don’t get the guilts about having a snack, that is unhealthy not the food.

Raw Avocado-Lime Pie

If you want to try something a little different then try raw food.

You eat raw already by snacking on fruit but that can be extended to raw foods like lasagna and cheesecakes.

Here are some Benefits of a Raw Food Diet ( taken from About.com).

  • Increased energy
  • Clearer skin
  • Weight loss
  • Reduced risk of disease

The raw food diet contains fewer trans fats and saturated fat than the typical Western diet.

It is also low in sodium and sugar and high in potassium, magnesium, folate, fiber, vitamin A, and health-promoting antioxidants.

These properties are associated with a reduced risk of diseases such as heart disease, diabetes, and cancer.

For example, a study published in the Journal of Nutrition found that consumption of a raw food diet lowered plasma total cholesterol and triglyceride concentrations.

The raw food diet is also thought to have a favorable acid-alkaline balance, being low in acid-forming food.

Too much acidity in the body is thought to result in disease and inflammation.

Besides the immediate benefits, the raw food diet may theoretically slow the aging process and reduce inflammation, because it contains fewer advanced glycation end products and other potentially damaging compounds.

I eat raw cakes maybe 1-2 pieces a night plus a beer or two, ok that’s not raw but hey no one said go 100%.

You don’t have to everything raw but if you include your taste buds might be pleasantly surprised.

Here is one of my favourite recipes called RAW AVOCADO-LIME PIE

CRUST

- 1 ½ cups raw macadamia nuts or cashews ( soaked or not)
- ½ cup shredded coconut
- 2 cups pitted dates or figs ( I use sometimes figs)
- a good pinch Himalayan or Celtic Sea Salt
FILLING
- 4 avocados probably Hass or Sheppards doesn’t matter
Juice of 5-7 limes
1/2 cup honey or agave nectar (to taste)
- ½ cup coconut oil (I think cold pressed virgin is the good stuff?)

For the Crust:
In a food processor, combine nuts, coconut, dates, and salt. Process the mixture until it is well combined, a little bit chunky, and sticky. When it is done, press the crust mixture evenly into a 9 inch pie pan. Stick it in the freezer while making the filling

For the Filling:
Using either a blender or the food processor, combine the avocados, limes, agave nectar, and coconut oil. Blend until smooth (this may take up to 5 minutes in a food processor) and pour the filling over the crust.
place it in the refrigerator for at least one hour and up to one day before serving. Use the freezer to speed it up I usually can’t wait.

If like more raw recipes here is a TV show that specialises in Raw food and I one of my recipes gets a brief mention at the 30 minute mark (self promotion yeah!) :-)

Thanks for taking the time to read this ( and watching) and if you want to try it in the Raw let me know by leaving a comment!

Wow, looks like a great recipe. I want to mention about the honey or agave nectar in your filling.

If you're gonna use honey make sure it's raw, NOT processed. I would not use agave as I read an article about the worst sweeteners and agave was number two.

      Hi Bob,
Thanks for that I should change that to Raw Organic honey, I just forgot to add it in. I'm not a big fan of agave I prefer honey but lots of people like it.
Thanks for taking time to comment and visit.

This is very interesting I know I will figure it out of my own when making based off of my choices but what would be a rough caloric intake on a conservative slice of this? Sounds delicious

    • Raymond Ho says:

      Hi Shawn,
I habe no idea, I don't normally pay any attention to the calories.
I would guess its a lot because of the Avocados, maybe 200 calories a slice
thanks for your question, if you make one, please let me know what you calculate the calories to be I'd be interested.

Partly due to being so bad at cooking I kinda stumbled into eating a lot more raw food a while back. It really does do wonders for you. One thing I'd add is that it seems to reduce the amount of sleep you need. I thought I might be going crazy but I'm not alone in experiencing this. Very cool.

So impressed you're getting mentioned on the TV too :-)

  • Raymond,

The avocado lime pie looks really good! I try to eat a lot of raw foods and I always feel better when following this kind of diet. It’s almost like a “cleansing” of sorts. I think in general the more natural and less processed your diet is, the better off you’ll be.

  • I must say I've never heard of raw Lasagna man!! I'll have to look into this because I'm big into raw foods. My girlfriend just did a week on a raw foods diet and said she felt great!

  • I've never really extended my eating of raw foods beyond fruits but it seems to make sense why you'd get additional benefits from eating other foods raw as well.

    • Raymond Ho says:

      Hey Dave,
I think more raw foods is a good thing as anything close to its natural state can't hurt but not a total raw diet.
As I try to imply a mix of Raw and cooked is a optimal
      Raymond

  • Eating food as close to nature is always best. I eat 80% paleo and 20% anything I feel like, just to balance out healthy living but also to have fun.

  • Jordan says:

    Raymond,
Your recipes always look delicious! While I eat a mostly paleo diet, I think raw foods are great. Especially raw food deserts like this one….mmmmm

    • Raymond Ho says:

      HI Jordan.
Thanks ,its very satisfying making your own desserts and then eating them. If you make them you are total control of the ingredients and usually can eat more than a store desserts
      Raymond

  • Hey Ray,
I like the concept. I actually never considered making anything like this. I will have to give it a go. I rate that you wash it down with a beer lol…
